No I don't believe you can, it would be rather silly to let that slip by and Pluralsight are not silly.

You obviously have to log in to the app with a valid subscription, if you then turn off internet connectivity and the date goes over the subscription end date I would assume that the content get's locked / deleted until you refresh the subscription information within the app.
